This coffee is of a carbonic maceration natural processing method, with cupping notes of
BLACKBERRY PRESERVES, CONCORD GRAPE JUICE and ROSE WATER.
Maracaturra is a variety cross between Maragogype and Caturra. It grows less cherries per tree than Caturra but they are much larger, as Maragogype has enormous beans. This is a coffee that should win competitions and change cuppers’ and brewers’ perceptions of what coffee can do.

We roasted this nano lot coffee for filter brew.
The term “CARBONIC MACERATION” is borrowed from winemaking, it is a process where the fermentation of whole coffee cherries is happening in sealed tanks in an anaerobic environment rich in carbon dioxide. That causes the cherries ferment inside out, breaking down the sugars and creating a unique flavour profile: sweet and fruity cup with creamy and smooth mouthfeel.
We find that such complex coffees are better enjoyed in filter. They open up fully expressing the potential, gently immersing you into the world of flavours, bringing up personal associations and memories. Indulge yourself with this intimate journey!
