Yesterday we had a pleasure to welcome In our lab Alice, tea expert from Canton, who offered us a fantastic tea degustation. We learned a lot, exploring different origins and producers with whom Canton is working. Did you know, that alike arabica & robusta in coffee, tea also has two different families?
Sinesis Sinesis is a more fragile plant that grows in highlands with lower temperatures, the production is smaller, but the tips from this tree are more delicate in taste and are qualified to result in any type of tea. On the other hand Sinensis Assamica is a more robust plant with bigger leaves, that grows with upper temperatures, in lower altitudes and is used specifically for black tea production.
There is an infinity of varieties and tastes of tea to discover, so only by tasting them all you can find your favorite.
